Melted Brie, Caramelized Onion, Pancetta and Jam Crostinis

These crostinis mix the flavors of melted brie, sweet strawberry honey jam, caramelized onions and crispy pancetta into a bite size appetizer sure to please everyone at a party.

Like, is that even an appropriate thing to say? You can say happy belated birthday...and really Christmas is celebrating the birth of Jesus...so I'm saying Merry Belated Christmas and just going with it ;)


I had a great holiday, it was nothing too fancy but the perfect mix of time spent with family and relaxing and indulging.  I stuck to my diet pretty religiously Monday-Friday last week so I could enjoy Christmas Eve and Christmas day eating and drinking whatever I felt like with no guilt.  It's Christmas for goodness sakes! No calories count on Christmas :)



I spent Christmas morning with my boyfriends family opening gifts and making breakfast together and then we headed over to my parent's house for more presents and a Christmas lunch. Each of us kids always brings something: my sister ALWAYS makes homemade cinnamon rolls with cream cheese icing, my brother always makes guacamole (didn't you know that guacamole is so traditional for Christmas?!? Hah!) and then I bring something as well.  After making some yummy crostinis for a family BBQ on July 4th, my mom requested I make another crostini appetizer to share!

I was all to happy to oblige, I love coming up with new flavor combos for these delicious little appetizers.  For these "Christmas Crostinis" I mixed melted brie, strawberry honey jam, caramelized onions, and pan-fried pancetta all onto baguette slice.  BAM. Talk about flavor explosion!!! The jam and onions give a nice sweet flavor that balances out the salty pancetta and the brie...well brie is just always a good idea.  

I used a strawberry honey jam that was canned and gifted to me from my sister, but any type of sweet fruit jam should work well for these. I actually caramelized the onions the day before and just reheated them on the skillet on Christmas to save some time. The pancetta fries up pretty quick and can be done while the brie melts on the crostinis in the oven.  After it comes out it's just a little assembly-line style work to add the jam, onions and pancetta and then get them on the table!


My sweet old grandmother even started grabbing these off of the baking tray before I had them plated on the table.  If Gram starts stealing them, I call that a winner! So serve um for Christmas, or serve um for any regular party, but these little Christmas Crostinis are a crowd pleaser for sure!

Melted Brie, Caramelized Onion, Pancetta and Jam Crostinis
These crostinis mix the flavors of melted brie, sweet strawberry honey jam, caramelized onions and crispy pancetta into a bite size appetizer sure to please everyone at a party!
Ingredients
  • White Baguette, Sliced
  • Brie
  • Strawberry Honey Jam
  • Sweet Onions
  • Olive Oil
  • Diced Pancetta
Instructions
Chop a large sweet onion into slices and caramelize in a pan by mixing with one tablespoon of olive oil and cooking over medium heat for around 15-20 minutesArrange the slices of baguette onto two cookie trays and spread each slice with brieBake at 400 degrees for about 10 minutes or until cheese is melted and bread is crispyWhile bread is baking, fry diced pancetta in a pan on the stoveRemove bread from oven and spread jam over the melted brieAdd a few pieces of caramelized onions ontop of the jamSprinkle each crostini with a few pieces of fried pancetta
