Peach Protein Waffles Recipe

Sundays to me normally mean long runs and glorious stacks of protein waffles or protein pancakes.

I'm skipping my long run today, but I think you could say that today's stack of protein waffles is sufficiently glorious, dontcha think so? 

Yup. Glorious looking AND glorious tasting. *Insert heart eye emoji here*

Today's stack of protein waffles is all about PEACHES because peaches are in that PERFECT moment right now where they are fresh and sweet and oh so delicious.  Since they are in their peak I knew I definitely needed to make a peach themed stack of healthy, protein packed goodness.  With peach flavored greek yogurt, a vanilla pudding mix drizzle, and just a bit of granola for an added crunch, this stack of waffles will have you going peaches and cream crunch crazy :)

And, as always, this huge plate of food is still healthy and good for you! The whole stack comes out to only 420 calories and packs 44 grams of protein. A perfect peach breakfast to get you moving for the day!

Healthy Garlic Chicken Sausage Goat Cheese Zoodle Recipe

I'm a firm believer in the fact that you can never have too much garlic.

Exhibit A: Today's recipe.  Multiple garlic themed components came together to make this quick and easy week night meal.  Just beware if you are making it on a week night where there is a chance you will be smooching someone later...cause you may need an extra dose of mouth wash to come away minty fresh after devouring this plate of healthy, garlic filled goodness.


Luckily for me I whipped this up on Monday night and had NO ONE to kiss that night so me and my garlic breath just had a party by ourselves. Me, myself and my garlic breath and PJ pants. Ah, living the good life. Wait. Should I really have started that sentance with luckily for me? ;)

Nah, I really am living the good life because this dish tasted amazing and I could eat this whole plate of food for only 525 calories with zero guilt involved!

Garlic Chicken Sausage Goat Cheese Zoodles

Ingredients: 



I found this dressing at my local Giant and it has AWESOME macros.  Two tablespoons is only 45 calories 2g carbs and 4g fat.

Steps: 

Create zucchini noodles or "zoodles" by spiralizing your large zuchinni.  I use this spiralizer (affiliate link) and one large zucchini gave me about 330g of zoodles.
    1. Sauté the zoodles in a large pan on medium heat with a spoonful of minced garlic until tender, stirring occasionally.
    2. Add in 3 tablespoons of Roasted Balsamic dressing, mix and set aside.
    3. Sear three chicken sausage links in a pan
    4. Once heated chop sausage into bite size pieces and mix with 1oz of goat cheese to create a creamy sauce.
    5. Serve chicken sausage over zoodles

      Nutritional Information:

      One serving was 524 calories and 24g carbs, 30g fat, 42g protein.

      Healthy Strawberry Cheesecake Protein Waffles

      I'm not always very good at sleeping.

       I woke up wayyyyy to early for no reason today. Like, 3:45AM early. Most normal people would be able to get up, go to the bathroom, and then GO BACK TO SLEEP CAUSE IT'S 3:45 IN THE FREAKING MORNING. Sigh. No, not me.  Sometimes my body just likes to be like Hey! Hah! No more sleep for you!

      Alas. I hung around in bed for awhile...scrolled instagram....checked facebook...and then by 4:30AM I figured it was an acceptable time to get up (barely). I hit up Wawa for a big ole cuppa coffee then came back home to eat breakfast. 'Cause if your up and rolling by 5AM, you might as well make use of your time, right???

      Well, today's breakfast was pretty delicious. Mayyyybe even worth waking up at 5am ON PURPOSE to make, like that's how good it was.  Well, if you are a morning person at least.  I'm sure that for some even the temptation of a healthy waffle stacked with creamy strawberry cheesecake yogurt and drizzled with syrup and a white chocolate crunch topping is STILL not worth waking up that early to make...but lucky for you this waffle is super fast and easy to make so even if you can't get up early to make it you can still whip it together in a jiffy to enjoy!

      Strawberry Cheesecake Protein Waffles


      Ingredients:

      Steps:

      1. Mix protein powder and baking powder together
      2. Beat in one egg
      3. Add enough water to consistency, around 1/4 cup
      4. Cook waffle in waffle maker (I use an oster brand)
      5. Cut cooked waffle into 4 servings and stack layering with greek yogurt and top with sugar free syrup, fresh cut strawberries, the crunch topping from the greek yogurt, and fat free reddi whip!


      Nutritional Information

      My waffle came out to 350 calories, 28 grams carbs, 9 grams fat, and 40 grams of protein. A perfect way to start your day with tons of protein while filling you up and leaving your strawberry cheesecake-loving tastes buds super satisfied.


      PS: One of the benefits of waking up at 3:45? It's now only 6:30AM and I've eaten breakfast, cleaned the whole kitchen, AND blogged.  Guess it's time to go get my run done!
