Brussel Sprouts, Shallots, Bacon and Manchego Cheese Side

This Brussel sprout side is a healthy and filling dish with amazing flavors developed from cooking the veggies in light butter and wine and adding in just enough bacon and cheese to make you almost forget you are actually eating Brussel sprouts ;)

If you ever find yourself with 7 bags worth of Brussel sprouts, this would be a great recipe to make.

Oh, what’s that? I’m the only person who ever randomly has seven bags of Brussel sprouts in her fridge at one time? Dang it.  I knew my love for Brussel sprouts was just a tad bit abnormal…

Heh. Ok, I really do loveeeeee Brussel sprouts and I did have 7 bags of them at once, but it happened by accident I PROMISE. Late this summer when I went away on vacation with my boyfriend’s family I planned to cook dinner one night and my recipe included Brussel sprouts.  There were a good amount of people staying at the house during vacation so I made sure to stock up at Wegmans at home before I left for vacation since you can buy bags of shaved Brussel sprouts pretty cheap there.  Great plan…until I left for vacation and left all four bags of Brussel sprouts sitting in my fridge in PA…very very far away from Chincoteague Virginia.  Dang it! Luckily I remembered I forgot them on the ride down so when we stopped at the grocery store before heading into the island for the week I bought three more bags as replacement.  Then, long story short, vacation was cut short early due to a medical situation with a family member and so I never had a chance to cook my dinner for everyone before leaving so three large bags of Brussel sprouts came right back home to PA with me. And then I just hadddd to eat all the Brussel sprouts before they went bad which wouldn’t seem too bad since I love them so much but guys…seven bags is really a lot of sprouts hahaha.

Luckily this side dish uses a bunch of brussels but also includes some other fabulous players to switch up the flavor profile like WINE and BACON and CHEESE!  Love ‘um or hate ‘um, these little veggies make a great healthy side and even if you are skeptical about trying them still this is a great recipe to start with. Do it for the bacon guys, do it for the bacon :)   
Here’s how you make it!

Brussel Sprouts, Shallots and Manchego Cheese Side
Now all you need is some BACON and this is a perfect side. Oh wait there is bacon...AND WINE!
  • 150g Brussel Sprouts
  • 50g Shallots
  • 1 Tbs light butter
  • 1oz White Wine
  • 2 Slices of Bacon
  • 15g Manchego Cheese
  • Lemon Juice
Cook 2 pieces of bacon and once cooled crumble into small pieces and set asideShave brussel sprouts by cutting off the bottom of each sprout and dicing length wisePeel and slice shallots Melt 1tbs of butter into sauté pan and add in Brussels and shallotsSauté for about 5 minutes over medium heat then add in 1oz of wine and cook covered for another 3-4 minutes or until Brussels and shallots are tenderAdd in half of the cheese and both bacon crumbles and mix together in panPlate and sprinkle with remaining cheese and a quick squeeze of lemon juice

One large side serving of brussel sprouts comes to 290 calories 17g carbs, 17g fat and 15g of protein
