Healthy Cornbread Chicken Casserole (High Protein!)

This cornbread casserole skips using any "cream of" soups and instead uses greek yogurt and high protein cornbread cakes to make a hearty casserole that is low in calories and extra high in protein!

I think we have officially reached casserole season.  When the weather gets chilly and it starts getting dark out earlier and earlier there is nothing quite like sitting down to a warm and flavorful casserole for dinner.  And speaking of it getting dark out earlier...I'm actually typing this recipe up at 5:30am Sunday morning of daylight savings because obviously my body did not quite catch the memo that it was supposed to "fall back" and I woke up wide awake at 5am.  Good morning!!!


Ah well.  I'm putting my forgone extra hour of sleep to good use because this recipe is both delicious and super healthy and I'm so excited to be sharing it with you!


Casseroles are great dishes to make because they can either serve a crowd or be used as left overs later in the week, or even freeze well! Since I'm just cooking for myself right now I whipped up this whole casserole and had some for lunch this weekend and then packaged the rest up to use as meal prep for my lunches at work throughout the rest of the week.

The bad thing about casseroles though is that often to give them that creamy and delicious texture they are packed with "cream of" soups and/or lots of cheese that are full of extra calories.


Well good news: this casserole is still creamy (check out that creamy deliciousness before it went in the oven!) but it uses NO condensed soup mixture and I used a few surprise ingredients to pump up the protein in this dish! In fact, one serving (1/8th of the casserole) has 29 grams of protein in it!!! My secret?


 Instead of using a traditional cornbread stuffing mixture I used high protein cornbread cakes from Eat Me Guilt Free! Healthy Cornbread Chicken Casserole
Protein cornbread cakes make this recipe super high protein and healthy while using NO condensed soup mixture! Adapted from Skinny Kitchen.
Ingredients
  • 1 lb of Chicken Breasts
  • 4 Eat Me Guilt Free Protein Cornbreads
  • 1 Medium Yellow Onion
  • 1 Medium Zucchini
  • Minced Garlic
  • 1/2 Cup Low Fat Sour Cream
  • 1/2 Cup Plain 0% Greek Yogurt
  • 1/2 Cup Non-fat Cottage Cheese
  • 2 tsp Trader Joe's Poultry Seasoning
  • Garlic Salt
  • Fresh or Dried Sage
Instructions
Preheat oven to 350 degreesCut chicken breasts into bite size piece and cook on a skillet over medium heat until done, about 10 minutes. Season with Trader Joe's poultry seasoningDice onion and zucchini and sautée in another pan over medium heat with minced garlic until soft. Season with salt and pepperCut cornbread cakes into small cubes and toss in a bowl with 1 tbs of fresh or dried sage. Combine greek yogurt, sour cream and cottage cheese in a bowl and season with about 1 tsp of garlic saltIn a large bowl combine cooked chicken and veggies, creamy mixture, and all but about 1/2 cup of the cornbread cubesSpray a 9x13 pan with cooking spray then spoon mixture into the dish. Top with remaining cornbreadBake at 350 degrees for 30 minutes
