Air fryer egg rolls stuffed with shrimp and veggies give you all the yummy flavors of a traditional chinese egg roll but without all the excess fat that traditionally comes from frying them!
I am loving using my air fryer (affiliate link - I have the philips brand!) to create yummy new healthy recipes. My air fried chicken tenders are still a favorite and now I've found that you can make EGG ROLLS in the air fryer that taste just as good as the real deep fried ones! Well, with like half the calories so that's a major plus :)
I mean, just look at the CRUNCH on these bad boys - all from being cooked in the air fryer with only a little bit of cooking spray and done in less than 10 minutes.
The egg rolls themselves are delicious but I also whipped together a healthy peanut dipping sauce to pair with them that is actually made with powdered peanut butter so it still low in fat but full of flavor!
Forget take-out Chinese, egg rolls that taste this good and can still be made at home are a win in my book. Next time you are feeling like Chinese and a movie in your sweatpants at home on the weekend you can just whip these up and not have to worry about putting on real pants to run out and get take-out ;)
I've listed a full recipe at the bottom of the post but took some photos of the process so you could see how they come together.
First step is to sauté the veggie mixture in one pan and cook the shrimp in another pan.
I laid out four egg roll wrappers on a baking tray
And then equally split the veggies and shrimp in between each wrapper
To wrap the egg roll wrapper I dipped my finger into some egg whites (can also just use water) and ran it along the upper two sides of the wrapper
And then started rolling up from the other end
Fold the two sides in
And then finishing wrapping the last flap over the roll (the egg whites/water help the wrapper stick together a bit but you should still store the uncooked egg roll seam side down until you are ready to cook it)
Once all of them have been wrapped they are ready for the air fryer basket!

You can make tons of different versions of these: use chicken instead of shrimp, leave out any meat and just add more veggies, really the best part about them is the CRUNCH you get from the air-fried egg roll wrapper so almost anything that you decide to stuff them with should taste great!
Air Fryer Egg Rolls
Egg rolls packed with veggies and protein and air-fried to crisp perfection are served with a low fat peanut dipping sauce to make the perfect side dish or main meal to satisfy that Chinese craving with a healthier option
- 1.5 Cups Red Cabbage
- 4 Egg Roll Wrappers
- 1.5 Cups Coleslaw Mix
- 50g Chopped White Onion
- Olive Oil
- 4oz Raw Shrimp
- 1 Tbs Reduced Sodium Soy Sauce
- 1 tsp Minced Garlic
- 1 tsp Grated Ginger
- 1 Tbs Reduced Sodium Soy Sauce
- 1 Tbs Rice Wine Vinegar
- 1 tsp Sesame Oil
- 3 Tbs Powdered Peanut Butter
- 1.5 tsp Brown Sugar
- 1 Tbs Water
- 1/4 tsp Garlic Powder
Add a small bit of olive oil to a pan and bring to medium heat. Sauté garlic and ginger for around one minute and then add diced white onion and cook a few more minutes until soft. Add cabbage, coleslaw mix and soy sauce and continue to sauté until soft. While veggies are cooking, sauté the shrimp in another pan for around 2 minutes per side until cooked through. Split veggie mixture and shrimp between four egg roll wrappers. Roll each wrapper into an egg roll shape, using just a bit of liquid egg whites or water to keep the wrapper stuck together. Please egg rolls into the air fryer basket, spray with olive oil spray and then cook for about 8 minutes at 390 degrees. Combine all ingredients for the peanut sauce together and whisk until mixed together.
