Collagen Chocolate Chip Bars

Happy 2018 friends! The start of a new year often comes with new health and fitness goals and it feels slightly strange for me to say it...but this is the first year in awhile I don't really have a weight related goal for the year.  I'm still happily maintaining my 100 pound weight loss and just want to keep on keeping on in that area. That's not to say I don't have overall goals for my health though.  The start of a new year is a great time to focus on overall wellness a and part of that is analyzing parts of my health that could be better.


Specifically speaking, I have noticed a lot of hair loss/thinning recently and it has led to me researching ways that I can naturally promote thicker, healthier hair and prevent more thinning.  I'm trying a few different options but part of my research led to me discovering collagen which seems to have TONS of health benefits including healthier skin, hair and nails, it supports bone and joint health, contributes to weight management, and helps support a healthy gut.

The brand Vital Proteins was recommended to me on my instagram page and I recently had a chance to try their products for my first time and I'm VERY pleased with my first experience!

Collagen is a type of protein so for my first use I decided to use it in baking.  These chocolate chip bars turned out SO GOOD! Baking with protein can sometimes lead to a baked good with a dry texture if not mixed with the right ingredients/ratios but that was NOT the case with these bars at all.  They are gluten free, low calorie, low in sugar but still high in protein AND taste.  My boyfriend declared them the best "protein baked good" I had ever made before!

Instructions
Mix together all dry ingredientsFold in wet ingredients (I microwaved the peanut butter for 30 seconds so it would be easier to mix) Mix until combined and then pour into a greased 9x9 inch baking pan Sprinkle chocolate chips over the top of the batter Bake at 350 degrees for 25 minutes or until a toothpick comes out clean
