Peanut Butter Protein Cookies

Peanut butter cookies for only 110 calories a cookie that are packed with 8 grams of protein each!


Peanut butter is pretty much my favorite food in the whole world.  If I can pick something to indulge in that's sweet, it will most likely involve peanut butter in some form or another.  I actually just got back from a weekend away in Atlantic City and I had a freaking AMAZING peanut butter crepe out a brunch on Sunday. It was a crepe filled with peanut butter and caramelized bananas and then topped with a raspberry mousse and vanilla ice cream and I'm sure was about 12,000 bagillion calories but was 100% worth every single one.

I don't like to gamble, but I love to visit Atlantic City to hang out and have an excuse to dress up fancy, eat some good food, and have some drinks!

Due to all the drinking and eating though the trip away is never good for my diet ;) but fun regardless and now that I'm back home and back on track I'm so glad that I had made a batch of these peanut butter protein cookies before I left! I had two cookies for my dessert tonight and they tasted delicious but only set me back 220 calories and still included 16 grams of protein!


These are completely boyfriend approved too: they are nice and moist from the peanut butter and you can't tell that they are made with protein powder at all.


Since they are made with protein powder, these cookies are actually gluten free too! I used a skinny syrup to add a little extra sweetness to the cookies without extra calories but you could probably just substitute milk like unsweetened almond milk if you don't have the syrup and if you like a sweeter cookie just add a little extra Truvia.  I do have to warn you: the batter will be VERY sticky for these so it might get a little messy while you are scooping out the cookies, but they turn out perfect so it's worth getting a little sticky for!


I might not be able to eat peanut butter crepes everyday and stay on track for my goals...but I could definitely eat these cookies every day without ruining my diet so I guess that's an ok trade off for me!!

Ingredients
      Instructions
      Preheat oven to 350 degreesUse a mixer to cream together the peanut butter, truvia, egg, vanilla extract and skinny syrup In a separate bowl combine protein powder, powdered peanut butter, baking powder and salt Fold dry ingredients into wet ingredients until a better forms (it will be very sticky!) Scoop tablespoon size portions of dough onto a baking tray lined with a silicone liner Bake at 350 degrees for 9 minutes and then let cool
