It's STRAWBERRY season and I can't get enough of them at the moment! You don't realize how flavorful strawberries can be until you try the first one of the new season and realize all the ones that you were eating up until this point of the year just really sucked in comparison haha. The first one I had this season was from a little produce place in New Jersey when I was visiting the beach with my parents and DANG: Jersey is called the garden state for a good reason because that was one of the best strawberries I've had my whole life!
Strawberries are delicious on their own, but throw um in a cake and they taste even better if you ask me. Although, is anything in cake ever a bad thing??? Probably not. Especially if it includes a sweet lemon icing glaze drizzled on top of the whole thing. That DEFINITELY kicks it up a notch.
This cake can also kick your BEAUTY GAME up a notch because I used Vital Proteins Beauty Collagen in the recipe to add flavor, protein, and great health benefits! The beauty collagen is a blend of bovine hide collagen peptides, hyaluronic acid, probiotics, and organic strawberry and organic lemon. Healthy Strawberry Lemon Cake
This healthy strawberry lemon cake features fresh strawberries and lemon zest for flavor and packs extra protein and health benefits from beauty collagen used in the recipe! Recipe modified from Amy's Healthy Baking Blog
- 1.5 Cups (180g) Flour
- 8 Scoops (64g) Vital Proteins Strawberry Lemon Beauty Collagen
- 1 1/2 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 1/2 Tbs Lemon Zest (1 Large Lemon)
- 1 Tbs Light Butter
- 46g (1 Serving) Egg Whites
- 1 Egg
- 1/2 of a 150g (One Small Container) Lemon Greek Yogurt (75g) Can sub plain or vanilla flavor
- 2 tsp. Vanilla Extract
- 1 1/2 tsp. Liquid Stevia
- 1/4 Cup (60ml) Lemon Juice (1.5 Large Lemons)
- 3/4 Cup (180mL) + 1.5 tsp Unsweetened Vanilla Almond Milk
- 1.5 Cups (210g) Strawberries
- 2 Tbs (18g) Confectioners Erythritol

Preheat oven to 350 degrees FIn a medium bowl stir together flour, collagen, baking powder, baking soda, salt and lemon zestIn a separate large bowl whisk together milk, melted butter, egg, egg whites, vanilla extract, liquid stevia, lemon juice and 60g of Greek Yogurt (save one tbs of half of the container for later)Slowly add flour mixture to wet ingredients, stirring until combinedGrease a 9.5 inch cake pan and pour batter into panSlice strawberries into thin slices and arrange in a circular pattern on top of the cake batter then bake for 40 minutesWhile the cake bakes, whisk together the confectioners sugar, 1.5 tsp of almond milk, and 1 Tbs (15g) of greek yogurt to make icing drizzleLet cake cool completely after done baking and top with icing drizzle before serving
