Peach Protein Waffles Recipe

Sundays to me normally mean long runs and glorious stacks of protein waffles or protein pancakes.

I'm skipping my long run today, but I think you could say that today's stack of protein waffles is sufficiently glorious, dontcha think so? 

Yup. Glorious looking AND glorious tasting. *Insert heart eye emoji here*

Today's stack of protein waffles is all about PEACHES because peaches are in that PERFECT moment right now where they are fresh and sweet and oh so delicious.  Since they are in their peak I knew I definitely needed to make a peach themed stack of healthy, protein packed goodness.  With peach flavored greek yogurt, a vanilla pudding mix drizzle, and just a bit of granola for an added crunch, this stack of waffles will have you going peaches and cream crunch crazy :)

And, as always, this huge plate of food is still healthy and good for you! The whole stack comes out to only 420 calories and packs 44 grams of protein. A perfect peach breakfast to get you moving for the day!

Peaches and Cream Crunch Protein Waffles




Ingredients:

Steps:

  1. Mix protein powder and baking powder together
  2. Beat in one egg
  3. Add enough water to consistency, around 1/4 cup
  4. Cook waffle in waffle maker (I use an oster brand)
  5. Mix powdered pudding mix with water to create the pudding
  6. Cut cooked waffle into 4 servings and stack layering with peach greek yogurt and serve with sliced peaches.  Drizzle with sugar free syrup and pudding and crumble the cereal over the top of the stack.  Add a bit of fat free reddi whip to the top and enjoy!

My waffle came out to 420 calories, 47 grams carbs, 7 grams fat, and 44 grams of protein.


So Sunday morning protein waffles are checked off my list for today! No long run but I DID get up and make it to the gym right when it opened at 7AM and sweated it out for almost an hour on my beloved stairmaster, so I think one week off from #sundayrunday won't kill me. I can take a break from running every now and again, but I for sure can't take a break from making delicious protein breakfasts :)
