Healthy Chicken Salad with Greek Yogurt

Mixing chicken salad ingredients with greek yogurt instead of the traditional condiment of mayonnaise cuts down on the fat and ups the protein in this yummy and healthy meal packed with fruit and flavor!


When I was heavy I made chicken salad almost every week for dinner.  I LOVED it!!! I would mix up chicken, onion, grapes, a few different seasoning, and a few big gobs of mayonnaise and spread it all on two big hoagie rolls and call it dinner. Yikes! No wonder I had to keep buying larger and larger pant sizes!!!

Chicken salad can be a very healthy meal...or very UNHEALTHY depending on how you make it and what you serve it on.  Today I have a super healthy way to share with you that still tastes great too!


This recipe gets lots of flavor from sweet fruit,  raw onions and a few seasonings so that it still tastes great mixed with just plain old greek yogurt.




This is perfect to prep in advance as well: I made a batch of this on Sunday and had some for lunch and saved the rest for dinners during the week.  I think it actually tastes better the next day after the flavors have had time to mix together while in the fridge.

You can serve it up anyway you like: make it into a sandwich, a wrap, or (since it is the beginning of the new year and we are all trying to be super healthy still) just serve it up on some lettuce wraps and enjoy!

Healthy Chicken Salad with Greek Yogurt

Ingredients
  • 1 Pound Chicken Breast
  • 1/2 Cup Red Onion Diced
  • 3/4 Cup Red Grapes Halved
  • 3/4 Cup Apple Diced
  • 1/4 Cup Dried Cranberries
  • 1/3 Cup Green Onions Chopped
  • 1/2 Cup Plain 0% Greek Yogurt
  • Lemon Juice
  • 1 Teaspoon Garlic Powder
  • Poultry Seasoning
  • Salt and Pepper
Instructions
Cut chicken breast into tenders and season both sides with poultry seasoning. Cook on a grill pan over medium high heat for five minutes on each side or until cooked through. Chop into cubes and let cool.Combine in a large bowl diced onion, apples, grapes, green onions, dried cranberries, greek yogurt, cubed chicken and garlic powder. Squeeze in lemon juice from half a lemon and mix all ingredients together adding salt and pepper to taste Serve over lettuce wraps, in a wrap, or roll!

  2. I’m a little late to the party on this one, but I just made this for the first time. It is GREAT! I don’t like “traditional” mayo-based chicken salad, so I really enjoy the light, sort of sweet flavor of this one. Thanks so much for a great recipe!
