Healthy Apple Cinnamon Baked Oatmeal

One of my favorite activities to do each fall is to go apple picking. I've been going to the same orchard every fall since I graduated college - I haven't missed a season in the last 5 years!


My boyfriend and I went back to our local orchard one weekend this month and we had fun picking apples, drinking some locally brewed hard cider, and swatting away about a million and two gnats all afternoon.  Ok, so the gnat thing was not fun but we put up with it for the sake of bringing home a basket full of apples!


We have had plenty of apples hanging around to take for snacks during the day at work, but I figured I should also use them for another seasonal recipe while I had so many! I've been wanting to try a healthy version of baked oatmeal for awhile now, and I decided an apple cinnamon version would be the perfect flavor to make for my first time.


This is a very low fat recipe, but I used two BIG apples in this dish which helps keep it moist.  I also added greek yogurt to keep it from becoming dry and to also give it an extra boost of protein.  I bumped up the protein even more by incorporating Vital Proteins Vanilla Collagen Peptides in with the oats! This is one of my favorite collagen supplements because it has a light, added vanilla flavor which works really well in baked goods.  Collagen itself it great for bone and joint health, but this supplement also includes natural hyaluronic acid which promotes healthy hair, skin, and nails as well!

This is a great recipe to make for meal prep on a Sunday and then eat for breakfasts for the rest of the week! You can eat the leftovers cold or reheated.  I personally like to eat it cold and drizzle on a little extra sugar free syrup on top.  You could also add some nut butter on top for some extra healthy fats and taste :)

Healthy Apple Cinnamon Baked Oatmeal
Healthy baked oatmeal with a great apple and cinnamon flavor. Recipe adapted from Haute & Healthy
    • 1 3/4 Cups (137g)  Rolled Oats
    • 1 Scoop (25g) Vital Proteins Vanilla Collagen Peptides
    • 1 tsp Baking Powder
    • 1 tsp Cinnamon
    • 1/4 tsp Salt
    • 1 Egg
    • 1 Cup (240ml) Unsweetened Vanilla Almond Milk
    • 1 Cup (227g) Plain Nonfat Greek Yogurt
    • 1/4 Cup (60g) Sugar Free Syrup
    • 2 tsp Vanilla Extract
    • 2 Large (350g) Apples, Peeled and Diced
      Instructions
      Preheat oven to 375 degrees FahrenheitCombine dry ingredients, oats through salt in a medium bowlCombine wet ingredients, egg through vanilla extract in another bowlFold the dry ingredients into the wet and then stir in the diced applesSpray an 8 inch by 8 inch baking dish with cooking spray and then pour in the oatmeal mixtureBake at 375 for approximately 45 minutes or until the center has cooked all the way throughServe hot, and store leftovers in the fridge to eat cold, or re-heated again!
