Coming home from school to SO MANY packages!!! Too bad most of them were Christmas presents for other people. Two were for me at least!!

Pumpkin Whoopie Pies with Cream Cheese Filling

While I'm still unpacking all my craft supplies from moving back home, enjoy this recipe from a guest post from the Family Ever After Blog. I promise to be back with some more fun jewelry/craft tutorials soon!

I know when most of you think pumpkin you think Thanksgiving. Well, I don't!! Haha. In my area, you can NEVER find pumpkin filling in the grocery store unless its October, November, or December. Thus, I enjoy making pumpkin recipes ALL through the holiday season, not just at Thanksgiving!!

Thus I give you...Pumpkin Whoopie Pies with Cream Cheese Filling

Here's how to make them!

In a large mixing bowl mix together 1 cup granulated sugar, 1 cup brown sugar and 1 cup canola oil. Add in an entire jar of pumpkin puree (the larger kind!), 2 eggs, and 1 teaspoon of vanilla extract,

Add to the pumpkin mix a mixture of 3 cups flour, 2 tablespoons of cinnamon, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon salt, 1 teaspoon ground ginger, and 1/2 teaspoon ground nutmeg.


Mix together until smooth.

Use a cookie scoop to spoon out tablespoon sized cookies onto parchment paper on a cookie sheet. Bake at  350 degrees for 12 minutes.

While the little whoopies are baking, you can get to work on the cream cheese icing!

In a large mixing bowl, mix together 3 cups of powdered sugar, 8 ounces of softened cream cheese, 1/4 cup of softened butter, and 1 teaspoon of vanilla extract.  Mix until most lumps are gone.


YUM. Anyone else REALLY enjoy being able to lick out the bowl after this step?? I so do :)

Take your whoopies out of the oven and let cool.

After they have cooled, ice the middle with the cream cheese icing.

Stick another whoopie on top, and you've got a pumpkin whoopie pie!

This recipe uses extra pumpkin so the whoopies are extra moist and delicious. They're so good, you'll want to eat pumpkin ALL year round!

Wedding Cake Plans

Now that I'm home from college for good and Christmas day marks the TWO MONTH mark for my wedding I'm trying to go full steam ahead to get these last details finished!! Thus, I hope you don't mind a lot of wedding related posts as I check some things off my list :)

Today I met with my reception site and picked out a wedding cake design (included with my package). Here is my grand scheme:

I'm in LOVE with the whole ruffle frosting trend right now. However, I didn't want a whole ruffled cake because I think they look a little too plain. So, I came across this cake:

And loved the idea of just having a ruffle on the side. However, it looks like that whole cake is done with fondant (I know these super professional terms from watching cake boss with my mom. Yeah, so impressive I know) and that would cost more than my package comes with!! So, I told them they could do a non-fondant version. The white of the cake would just be smooth icing and the ruffles would look more like this:

But only on a little section.  And thennnnn just because I still thought it was a litttttle too plain I asked for a few flowers to be made to line the ruffle similar to these:

And so a like 2 minute paint drawing on my computer leads to a general idea of this...but only much prettier. (Hey, I may be crafty but I am NOT an artist!!! haha)
So any thoughts? What did your wedding cake look like? There all so pretty, it's a shame the first bit will be smashed into my face haha :)
